The MGT will assist the Executive Chef and Executive Sous-Chef in handling all aspects of the kitchen operation to maintain and develop the high quality of food. All duties are to be performed in accordance with departmental and MGM Grand policies, practices, and procedures. | | | | | |
Principal Duties & Responsibilities | Maintains quality and proper presentation of food and drives the customer relationship management system by ensuring that all such orders and inventories are handled correctly. | Expedites all food orders to set quality standards and presentation. | Communicates with chefs, management, employees, and guests efficiently with proper reporting and meetings, while providing appropriate leadership for subordinates. | Schedules and maintains the budgeted labor costs as well as potential food cost. | Understands and utilizes Stratton Warren and Coupa systems for properly purchasing, releasing orders and handling cost transfers. | Maintains a hygiene level above that required by the local Health Department and ensures that food sanitation, safety and proper food handling functions are practiced on a daily basis. |
