Principal Duties & Responsibilities | Prepares meals and other food items according to assignment by the Specialty Sous Chef or Restaurant Chef at assigned Sauté, Entrée, Wheel, Salad/Pantry, Appetizer, or Add-On fine dining stations in accordance with fine dining standards and guest requests. | Works in an ala carte setting with the ability to monitor and control ticket flow and continuity of service. | Monitors customer flow and estimates daily food requirements and supplies, and requisitions items needed on a daily basis through the Specialty Sous Chef. | Uses recipes and a variety of kitchen equipment to roast, broil, sauté, bake, boil, blanch, braise, fry, sear, and steam food to prepare and reheat soups, salads, sauces, dressings, and other food items. | Plate meals or other food items in accordance with plate presentation specifications. | Informs supervisor of any irregularities occurring within the food preparation operation. | Provides excellent and cooperative service to dining room staff and guests. | Maintains clean and sanitary work areas throughout the meal period or working shift. | Maintains a constant awareness of safety and accident prevention, immediately notifying the supervisor and completing an accident report in the event an accident occurs. | Ensures food prep areas and related floor areas are properly clean and safe at all times from any spills or mess that have been created by self or others. | Promotes and maintains a professional, friendly, prompt, accurate, and courteous atmosphere while providing the highest level of service to all guests by exhibiting S.H.O.W. Service Basic Standards, including smiling, greeting, and making eye contact, while staying alert to their needs. | Responds effectively to guest inquiries related to MGM Grand Detroit and the downtown Detroit area. | Resolves guest complaints within scope of authority; otherwise refers the matter to management. | Notifies Supervisor and/or Security of all unusual events, circumstances, missing items, or alleged theft. |

Additional Requirements | Details | Required/ Preferred | Previous Culinary training or vocational certification preferred. | Preferred | Two (2) years of food production/preparation experience in a similar high-volume restaurant setting. Ala carte experience preferred. Food production/preparation experience in a three-diamond rated property or above (AAA Diamond Rating) preferred. | Preferred | Ability to understand units of measurement, basic math skills. | Preferred | Basic cooking and food preparation techniques to include knife skills and ability to use other kitchen appliances and equipment. | Preferred | Excellent guest service and hospitality skills. | Preferred | Strong problem solving and listening skills. | Preferred | Self-motivated with excellent organizational skills and attention to detail. | Preferred | Bilingual abilities | Preferred | | | |
