The Fine Dining Cook III is responsible for preparing meals and other food items at assigned fine dining stations, adhering to fine dining standards and guest requests, while providing excellent service to guests. All duties are to be performed in accordance with federal, state, and local laws, regulations, and ordinances, as well as department and Company policies, practices, and procedures, within the framework and intent of the MGM Grand Detroit Mission Statement.


Principal Duties & Responsibilities

Prepares meals and other food items according to assignment by the Specialty Sous Chef or Restaurant Chef at assigned Sauté, Entrée, Wheel, Salad/Pantry, Appetizer, or Add-On fine dining stations in accordance with fine dining standards and guest requests.

Works in an à la carte setting with the ability to monitor and control ticket flow and continuity of service.

Monitors customer flow and estimates daily food requirements and supplies, then requisitions items needed daily through the Specialty Sous Chef.

Uses recipes and a variety of kitchen equipment to roast, broil, sauté, bake, boil, blanch, braise, fry, sear, and steam food to prepare and reheat soups, salads, sauces, dressings, and other food items.

Plate meals or other food items in accordance with plate presentation specifications.

Informs the supervisor of any irregularities occurring within the food preparation operation.

Provides excellent and cooperative service to dining room staff and guests.

Maintains clean and sanitary work areas throughout the meal period or working shift.

Maintains a constant awareness of safety and accident prevention, immediately notifying the supervisor and completing an accident report in the event an accident occurs.

Ensures food prep areas and related floor areas are properly clean and safe at all times from any spills or mess that have been created by self or others.

Promotes and maintains a professional, friendly, prompt, accurate, and courteous atmosphere while providing the highest level of service to all guests by exhibiting S.H.O.W. Service Basic Standards, including smiling, greeting, and making eye contact, while staying alert to their needs.

Responds effectively to guest inquiries related to MGM Grand Detroit and the downtown Detroit area.

Previous Culinary training or vocational certification preferred.

Two (2) years of food production/preparation experience in a similar high-volume restaurant setting. Ala carte experience preferred. Food production/preparation experience in a three-diamond rated property or above (AAA Diamond Rating) preferred.
