Principal Duties & Responsibilities
Performs maintenance and repairs of large & small kitchen equipment.
Repairs of plumbing and associated equipment i.e. gas line hook up, filter maintenance, equipment parts replacement, etc.
Maintains the kitchen shop and par levels for all parts associated with the specific equipment that is located throughout the property
Maintains the Pollution Control Units and hood systems
Escorts the hood/PCU cleaning company on a monthly basis and keep track of records
Ensures that new equipment is hooked up according to the specifications and/or architectural plans
Performs routine maintenance to all kitchen equipment as a part of a zone maintenance program
Work with HotSOS or equivalent work order system to track and memorialize all repairs, etc.
Provides updates to management on the condition of equipment
Performs maintenance of all refrigeration rack units throughout the facility
Performs maintenance and repairs of refrigeration units, dish washers and ice machines.
Maintains operation, maintenance, and repair of all beverage conduit, F&B specific lighting, CO2 monitors, walk-in coolers, etc.
Performs maintenance and repairs of pumps and pressurized water systems.
Replaces gaskets and seals on a regular basis
Performs additional job duties as determined by management.
