It is the primary responsibility of the Food & Beverage Safety & Sanitation Manager to assure regulatory excellence across all permitted venues; this role ensures compliance with all applicable government regulations and MGM Resorts Food Safety & Sanitation Standards, to include maintaining Health District food regulations and corporate, property, and departmental policies. All duties are to be performed in accordance with departmental and property policies, practices, and procedures.

Principal Duties & Responsibilities
Assure compliance with all government regulations for all permitted facilities. Maintain Health District Food Regulations and MGM Resorts Food Safety Sanitation Standards and Policies.
Maintain professional working relationships with various internal departments and relationships with external regulatory agencies to include SNHD, FDA, USDA, OSHA, third-party vendors, and any other relevant regulatory agencies
Maintain Food and Beverage Food Safety Training Courses working closely with Division Training Manager and other MGMRI Learning & Development personnel
Conduct internal inspections of all pantries, bars, lounges, kitchens, retail operations, and warehouse facilities
Ability to collaborate with and constructively coach personnel on all levels and to proactively correct and address environmental health issues within different departments. Be involved with all environmental health issues throughout the hotel
Ensure FOH and BOH employees meet both state and departmental requirements concerning food handling, sanitation and personal hygiene
Identifies training opportunities within the department and provides employees with proper Food Safety Sanitation Training

Working Knowledge of PC Computer Software (MS, Word, Excel, Powerpoint)	Preferred
Previous experience working in F&B operations within a major hotel/casino or in a similar resort setting	Preferred
Professional appearance and demeanor	Preferred
Familiarity with SNHD, FDA, USDA, CDC, HACCP guidelines	Preferred
