The Director of F&B Strategy is the owner of assigned continuous improvement initiatives and provides project management support to execution of strategic objectives developed by the F&B COE. They will lead initiatives and programs that support top-line growth through driving revenue and initiatives that optimize profitability by effectively managing labor, cost of goods and other expenses.  They will help drive the development, adoption, utilization, and sustainment of best practices, tools and systems throughout F&B departments by segment, portfolio mix and enterprise wide. All duties are performed in accordance to company policies and procedures.

 


Principal Duties & Responsibilities

Provide leadership to property F&B Leadership teams throughout development, socialization and implementation of recognized best  practices within MGMRI or the F&B industry related to Revenue, Labor, COGs, etc. Build and maintain strong, collaborative  relationships with property F&B and regularly solicit feedback on initiative implementation processes.

Collaborate with various COEs (Labor, Analytics, Talent, etc.) to support development of F&B portfolio/segment strategies focused on  driving business results and targets. Assign and work with SMEs to develop and identify best practices; communicate with key  stakeholders to provide input and create buy-in.

Oversee and execute development and maintenance of documentation and toolkits that support F&B operational strategies  (Operations Playbook, project decks, project trackers, leadership toolkits, employee toolkits, etc.).

Lead project meetings and present to COE senior leadership and property F&B leadership on project status.

Keeps current on all relevant F&B trends to identify solutions, products, and concepts to pursue that support food and beverage strategies.
